Cheese and Olive Quiche with Pizza Sauce (3-4 servings)
2 packs of Skinny Pasta Noodles or Skinny Pasta Couscous
100 gr. grated feta cheese
1 package of cottage cheese
1/2 cup of grated mozzarella cheese
2 tablespoons of tomato paste
1 handful of pitted olives
1 teaspoon of dry oregano
Salt to taste (optional)
Topping: 1/2 cup of grated mozzarella cheese
Directions: Preheat the oven to 340 degrees.
Rinse Skinny Pasta under warm water and drain.
In a bowl mix eggs, cottage cheese,1/2 cup mozzarella cheese, feta cheese, olives, oregano and salt (optional). Add the Skinny Pasta to the bowl and mix well. Oil a 20cm x 30cm baking pan with cooking spray. Pour the mixture from the bowl into the baking pan. Top with the other 1/2 cup of grated mozzarella cheese. Bake for 40 minutes.
