50 gr. celery root peeled and diced into small cubes
Salt and pepper for flavor
Olive oil for sauteing
Rinse the Skinny Pasta under warm water and drain.
In a medium pot, heat a little olive oil (1-2 tablespoons), add the onion and saute until golden. Add the lentils and saute for another 5 min. Add the celery, carrot and the zucchini and continue mixing.
Add 2 cups of boiling water and mix. Cover the pot and lower the heat and let simmer for 20 minutes, until the lentils soften.
Season with salt, pepper and cumin (optional). Add the skinny pasta, mix everything well. Taste and add more seasoning as necessary.
