150 gr fresh tomatoes cut into small cubes (about 1 medium size tomato or ¾ - 1 cup)
1 tsp salt
1 tsp sunflower oil
¼ cup tomato sauce
1 tsp cornstarch
In a small bowl, whisk together soy sauce and cornstarch. In a medium size skillet stir the eggs until they are partly cooked, add the scallion and the chicken and saute. In a separate pot add the oil and tomatoes and saute until thickens. Add the soy mix and tomato sauce and stir. Add the chicken mix and continue stirring until the dish and sauce thicken. Warm up the noodles and top with the protein-packed sauce.
