Protein Packed Couscous with Green Lentils


2 pack of Skinny Pasta Couscous

1 onion thinly sliced

½ cup green lentils, washed

½ carrot peeled and diced into small cubes

½ zucchini diced into small cubes

50 gr. celery root peeled and diced into small cubes

Salt and pepper for flavor

Olive oil for sauteing


Rinse the Skinny Pasta under warm water and drain.

In a medium pot, heat a little olive oil (1-2 tablespoons), add the onion and saute until golden. Add the lentils and saute for another 5 min. Add the celery, carrot and the zucchini and continue mixing.

Add 2 cups of boiling water and mix. Cover the pot and lower the heat and let simmer for 20 minutes, until the lentils soften.

Season with salt, pepper and cumin (optional). Add the skinny pasta, mix everything well. Taste and add more seasoning as necessary.

salt and pepper. Add the Skinny Pasta and the soy sauce and continue to saute for another 5 minutes.

Sprinkle a handful of the chopped peanuts and serve.
