Skinny Pasta Couscous Tabouli Salad (4 servings)


1 pack of Skinny Pasta Couscous

1 bundle parsley

1/2 bundle mint leaves

3 large tomatoes, diced

3 spring onions, cut into thin rings

3 tablespoons of extra virgin olive oil

The juice of 2 lemons

1 teaspoon salt

1/2 teaspoon black pepper


Rinse Skinny Pasta under warm water, drain and place in a bowl.

Chop the parsley and mint leaves thinly and add into the Skinny Pasta bowl. Add the diced tomatoes and the thin spring onion rings into the bowl. Dress the salad with olive oil, lemon juice, salt and pepper and mix well.
